Just in time for summer, AMERICAN FISH by Michael Mina at ARIA Resort & Casino unveils a seasonal signature tasting menu that captures the essence of a season synonymous with long days, the great outdoors and celebrations packed with comfort foods. The four-course menu, available throughout June and July, presents specialty dishes made from the finest ingredients from land and sea, sure to leave guests with delicious memories for summers to come.
“We created a fun, seasonal and approachable summer menu that offers familiar, American classic dishes with a modern twist,” said Executive Chef Sven Mede.
The creative inventions include the Diver Scallops “Hot Dog” in which fresh, plump scallops line the inside of a Parker House roll and are covered with melted leeks and crispy shallots; Beef Short Ribs “Animal Style,” where smoked Chipotle French fries are smothered in Manchego cheese then topped with succulent beef short ribs; and the New England “Clam Bake,” an array of assorted seasonal shellfish served with fresh corn and tomatoes.
This summertime feast would not be complete without cool, refreshing dessert options. The Ice Cream Sandwich pairs chocolate pecan cookies with Michael Mina’s signature Root Beer Float and the Fried “Twinkies” are a mixture of marinated market fresh berries topped with Grand Marnier ice cream.
Guests wishing to seek refuge from the scorching summer heat without sacrificing the enjoyment of outdoor dining will take pleasure in AMERICAN FISH’s rustic décor.
